I’m investigating my deployment process, and that brings me to a question: is there some WP CLI command that let you refresh all the templates of a block-theme to the ones provided by the template files? So basically discard all the database-versions of the templates?

wp theme mod remove --all would remove ALL theme mods, and might remove more than just your templates. https://developer.wordpress.org/cli/commands/theme/mod/remove/

Another way more specific way to do it would be:
wp post delete $(wp post list --post_type=wp_template --format=ids) --force
wp post delete $(wp post list --post_type=wp_template_part --format=ids) --force
